Zucchini with Crispy Prosciutto

This is a tasty salty vegetable dish, which goes great with a summer grilled steak or for a special celebration dinner.  Using fresh zucchini, asparagus, or even yellow squash, eating vegetables can be delicious.      

Zucchini with Crispy Prosciutto

Ingredients

3, 8 or 9 inch Zucchini

3oz thinly sliced Prosciutto (Boar’s Head is always Gluten Free)

Cracked pepper

Instructions

  1. Preheat air fryer, or convection oven to 350 degrees

  2. Wash Zucchini well 

  3. Cut Zucchini in half and then in half again. Do not cut off outer skin.

  4. Wrap each quarter strip spear with the prosciutto

  5. Depending on the size of the air fryer, place 4 – 8 slices in the basket.  If using an oven, place zucchini spears on a sheet pan evenly spaced out from each other.

  6. Roast for 10 – 15 minutes, until desired doneness.
