Easy but Fancy Cookies

 
 

This recipe was my mom’s favorite of the cookies I baked to send them after they retired to Florida in the 1980’s. My dad loved his pizzelles with anise in them. My mom was happy with a shortbread kind of cookie that had a little chocolate on it. If they made her happy, I was sure to make them for her. She’s been in heaven for 25 years, but I still make these every year in her memory.

You will need milk chocolate stars for this recipe. I suppose you could use Hershey kisses, but I like to stay true to the recipe. And the look so Patriotic - perfect for July 4th!!

The recipe came from a Pillsbury cookbook, Simply from Scratch, Volume 3 (1981). Plan ahead if you make these, the dough needs to be chilled before cutting and baking. 

Easy but Fancy Cookies   

350 degrees, ungreased baking sheet 6-7 dozen

Ingredients

  1. 1 cup of butter, softened NOT MELTED

  2. 1 cup powdered sugar

  3. 1 teaspoon vanilla extract 

  4. 1 1/4 cups flour

  5. 1 cup uncooked oatmeal

  6. Chocolate Stars

Cream the butter and sugar, add flavoring. Stir in flour and oats. Shape into 2 rolls, each about 1 1/2” in diameter. Wrap each roll in wax paper and chill.

When ready to bake, cut rolls into 1/4” slices, place each slice on baking sheet. Top each slice with a star. Bake 7-10 minutes until golden brown.
