Love in the time of COVID-19, to borrow a borrowed phrase, can be shown in so many different ways. I’ve sewn, at the time of this writing in May of 2020, just under 600 cloth masks to donate or sell rather inexpensively.

In the space of the time I’ve been sewing, my husband Ray, also known as “Honey,” has been impressing me with his interpretations of my recipes. He makes them his own, and they’re delicious. So, credit where it’s due: Here’s to Honey!

God gave me Honey when I made a list and claimed a scripture, Psalm 37:4. I’d been divorced, was single-parenting, and felt overwhelmed by the care and cost of raising three kids alone. My friend Brenda had encouraged me by saying I needed to tell God what I wanted instead of telling her what I didn’t want.

So I was blessed with a husband who supplies my every need. He makes me laugh. He loves my kids. He sings all the time, and he’s great at doing things without waiting to be asked.

As I was in my little sweatshop humming away on the sewing machine, my beloved surprised me one morning with the most glorious breakfast of crepes.

A big tip: do every step slowly, and don’t get too enthusiastic with the mixing.

Here it is:

Crepes

Ingredients

1 cup flour

3 eggs

1 cup milk

1 cup water

1 tsp salt

1 tbsp sugar

2 tbsp butter (melted)

½ tsp vanilla extract/flavoring

Instructions

  1. Whisk the dry ingredients together

  2. Whisk eggs, milk and vanilla together then add to dry ingredients

  3. Add the water and butter

  4. Continue mixing until there are no lumps in the batter

  5. Pour slightly less than ¼ cup of batter into a small (6 inch dia.) frying pan 

  6. Cook on medium heat for about 2 minutes then flip and cook on the other side for 1-2 minutes

  7. Stuff and serve with your favorite fillings and toppings
