Hearty and Hot No-Meal Cereal Substitute
A no-grain diet has helped some people with symptoms of muscle aches, fatigue and even brain fog. Removing grains from your diet can be discouraging if you like hot cereal. Here is a hearty hot cereal “substitute for oatmeal” that is just as satisfying on a cold morning.
Using shredded, unsweetened coconut, with all the other added goodies in this recipe provides for a grain-free, low-carb alternative to traditional oatmeal. And coconut is gut friendly with its lauric and caprylic acid content, which have antifungal, antibacterial, and antiviral properties. Coconut also contains medium-chain fatty acids (MCTs) a fat used to boost metabolism, improve sleep, and help the regulate the adrenal glands.
Walnuts, almonds, ground flax seeds, and chia seeds all provide a source of fiber and vitamin E.
Hearty and Hot No-meal (cereal substitute)
Serves 2
Ingredients:
1 cup shredded unsweetened coconut
3 Tbsp almond flour
2 Tbsp ground flax seed
1/4 cup each whole walnuts and whole almonds
2 Tbsp chia seed
1/2 cup full fat coconut milk
1 1/2 cup filtered water, plus additional to thin to desired consistency
1/2 tsp ground nutmeg
1 tsp ground cinnamon
1/2 tsp ground ginger
1 tsp vanilla extract
½ tsp sea salt
2 scoops protein powder (I use Vital Proteins Collagen Peptides)
Garnish with: Chopped nuts, and coconut flakes for serving
Plus1/2 cup frozen organic blueberries per bowl
Instructions.
Place all ingredients except protein powder, and toppings in a small saucepan and heat to boil, then turn down to simmer.
Cook, stirring occasionally until mixture thickens (in about 5-10 minutes).
Remove from heat
Add in the additional chopped nuts and coconut flakes to soften.
Stir in the protein powder.
Garnish with ½ cup blueberries.
NOTE: Thin mixture after cooking with additional filtered water as needed. To make overnight NO-oats, mix up this recipe ahead of time and place in individual pint size canning jars. Keep in refrigerator for up to three days.
