Watermelon Stix

Watermelon is the ultimate summer fruit. Not only is it refreshing, watermelon has an abundance of healthy electrolytes to replenish hydration lost in the summer heat. Because watermelon has such a high water content, a serving is considerably low for fruit yet high in nutrients like potassium, lycopene, and citrulline, helping with blood pressure, muscle soreness, and even insulin sensitivity. This inventive take on watermelon will elevate any summer gathering. Slice the watermelon in half, then cut all four sides to make a square. Slice down the watermelon to provide a nice two-inch steak. Lay this steak down and cut 2-inch rectangles like a popsicle bullet. You can put a skewer or popsicle stick, in the end, to add even more creativity to this otherwise limited variation of this fruit.

 

Watermelon Stix

 

Ingredients:

Watermelon

2 Tablespoons crumbled Feta cheese

2 Limes

1 Tablespoon fresh minced Parsley

 

Spice mix:

1/2 teaspoon Paprika

1/4 teaspoon ground Cumin

1/4 teaspoon Salt

Optional: pinch Red Pepper flakes

 

 

Instructions

1.      Cut watermelon into long rectangles as described in the narrative. Add popsicle sticks or skewers if desired. Place on a serving platter.

2.      Mix together the spices and lightly sprinkle mix over the watermelon sticks.

3.      Squeeze one of the limes and spoon the juice over the watermelon.

4.      Distribute the Feta cheese and parsley across the watermelon.

5.      Lastly garnish the dish with limes slices.
