Strawberry Scones (gluten-free)

June 2022 marks some milestone dates. I will be turning 60, and Her Majesty Queen Elizabeth II of England will celebrate the Platinum Jubilee.The Platinum Jubilee marks the 70th anniversary of The Queen's accession to the throne, way back in 1952, before I was even born. This is the first time any British monarch has reached this historic milestone. When she was merely 25 years old, Princess Elizabeth became queen and just turned 95 on April 21st.  

 

I'm a self-proclaimed late bloomer. I got my period way later than most of the girls I knew. I graduated college late. I didn't meet my husband until I was 28. We got engaged and married when we both turned 30 and had our first child when we were 34. Time is a funny thing. We lived our lives, day-in and day-out, doing our best. Some days were long and difficult (with two kids under two). But as I look back at my life from my 60th birthday, the years seem to now fly by so fast. I'm more cognizant than ever that the next twenty years will be those of my legacy.  

 

Think about it. Most of the first twenty-five years of life are spent growing up and learning to become more than a child. The next twenty-five or thirty years are spent growing up in your family (if you are blessed to have children and even be involved with children and their lives). In the last twenty or so years left (the average age of death for American women is 80), you spend on what you deem important to you. Is it fishing? Is it taking world cruises? Is it helping to look after and raise your grandchildren? Is it writing a cookbook with family recipes?  

 

As the UK celebrates the Platinum Jubilee, I will be contemplating what will be said at the life celebration scheduled for me when that time comes. What will I do with the next twenty years? If I'm blessed to live that long. How can I fulfill my purpose to live life to the fullest and positively impact people, especially those I love and care about. I can only hope that the words are similar to those in Matthew 25:23 NIV "His master replied, 'Well done, good and faithful servant! You have been faithful with a few things; I will put you in charge of many things. Come and share your master's happiness!' 

 

 

Gluten-Free Strawberry Scones 

Ingredients  

2 Cups Gluten-Free All-Purpose Flour; usually a blend of rice flour, sorghum flour, tapioca starch, and potato starch or Regular All-Purpose Flour. Use regular wheat flour for a non-gluten-free version. 

1/3 Cup Granulated Sugar 

1/2 tsp Salt 

1 Tbsp Baking Powder 

1 stick (1/2 cup) Butter straight from the fridge 

1/2 cup Lite Coconut Milk canned 

1 Large Egg 

1/2 tsp Cinnamon 

1 Cup Fresh Strawberries Chopped 

 

More cut up strawberries to serve with the scones 

 

Sweet Glaze 

1/2 Cups Powdered Monkfruit Sweetener Sugar 

1 tsp. Lemon Juice 

2 Tbsp Lite Coconut Milk canned 

 

Instructions 

1.      Cut strawberries into quarters, then chop into small pieces, but not minced.  

2.      Stir flour, sugar, salt, and baking powder together. 

3.      On a cutting board, cut the butter stick in half, then half again, then in small diced cubes. 

4.      Put the butter into the flour and "cut in" butter with a whisk or pastry brush. Keep blending until the flour mixture is crumbly dough, like pie crust. 

5.      Beat one egg in a small bowl. 

6.      Add the coconut milk and cinnamon, and blend. 

7.      Pour the liquid mixture into the dry ingredients, and stir to moisten. 

8.      Blend in the diced strawberries. 

9.      Dump the dough onto a piece of parchment paper that is on a cooking sheet. With another piece of parchment paper, press down and spread out dough in a circle about eight inches around and ¾ inch thick. 

10.  Preheat the oven to 375*F. 

11.  Bake for 20-25 minutes or until golden brown. 

12.  Remove from oven and cool slightly; then cut into eight wedges, like a pizza. 

13.  Whisk the Powdered Monkfruit Sweetener Sugar, canned Lite Coconut Milk, and lemon juice to form a glaze.  

14.  Drizzle over the scones.  

15.  Serve with fresh strawberries and strawberry preserves; warm or room temperature. 

16.  Refrigerate leftovers in an airtight container.
