Pumpkin Muffins

A "Paleo" diet is supposed to resemble what our human ancestors ate thousands of years ago during the paleolithic period, also known as the Stone Age. There are many versions of the paleo diet. Still, the foods are generally less processed, avoiding sugars, sugary empty calorie drinks, all grains, most dairy cow products, artificial sweeteners and colors, legumes, industrial seed oils including canola, margarine, shortening like Crisco, etc.

The paleo diet plan includes seasonal fruits and vegetables, nuts, seeds, herbs, spices, eggs, fish, meats of all kinds, healthy fats, and oils like olive oil, avocado oil, and coconut oil.

These pumpkin “paleo” muffins are a low-sugar version. However, the pumpkin flavor is just right!

The eggs in this recipe give the muffins their height. Use paper liners to give the batter something to cling to as it rises. Then wait for them to cool before handling them to prevent them from deflating. The longer you wait (at least 30 minutes), the more manageable the muffin will peel away from the liner.

PUMPKIN MUFFINS

Ingredients

1 Cup Almond Flour 

1 Tbsp + 2 tsp Pumpkin-pie spice mix

1/2 tsp Nutmeg

1/2 tsp Turmeric

1/4 tsp Kosher salt

1/2 tsp Baking Soda

1/2 Cup Pumpkin Puree

1/4 Cup coconut milk 

1 Tbsp Vanilla

2 Tbsp Honey

2 tsp Stevia

3 large Eggs

Instructions

1. Preheat oven to 400*

2. In a large bowl, blend the almond flour, pumpkin pie spice mix, nutmeg, turmeric, salt & baking soda

3. In a medium bowl, blend the pumpkin puree, coconut liquid milk, vanilla, honey & stevia

4. In a separate bowl, thoroughly mix the eggs but do not whip

5. Combine eggs into the pumpkin mixture.

6. Fold the pumpkin mixture into the almond flour mixture.

7. Place in paper liners

8. Lower oven to 350* & place muffins in oven for 25 minutes

9. Test with a toothpick. Bake another 5 min is too soft and sticking to the toothpick

10. Cool for at least 30 minutes before removing muffins from the pan.

11. Wait at least another 10 minutes before trying to take the paper off the muffins. They are more solidified and better on the second day.
