Cookie Cake

Oh, heavens, it’s after the holidays and we’re probably cookie’d out! I’m trying to be…but I’m not sure if that’s possible.  I had two of my childcare guys (they graduated, but we had a special gathering for them) over to celebrate their December and January birthdays. They are cookie monsters for sure, and not as big fans of frosting as their little sisters!

​I have a question for you: How many of you have seen all the reels and TikTok's on Facebook? I have to stop myself from going down that rabbit hole or I’ll lose a half hour of my life without even realizing, until it’s too late!

​Of course, there was this one particular recipe I couldn’t stop watching, so I’m going to legitimize my time-wasting by saying it was research! Plus, if you’re like me, you have all the ingredients on hand. I confess, I have a half-gallon jar of mini M&M’s. I get giant brown eggs for $1.75 a dozen from an Amish farm. When cake mixes are a dollar, I grab a few for the pantry. 

​There’s your recipe, darlings! A three ingredient cookie cake! Happy New Year! Sure, the big boys were way too cool to be as enthusiastic as the littles, but I can say there were ZERO leftovers!

 

Cookie Cake

Ingredients

1 Box of Cake mix (yellow works well)

3 Eggs

2 cups of mix ins (M&M’s, baking chips, nuts etc) 

 

Preheat oven to 350 degrees. Line a pizza pan with parchment and spray it with nonstick cooking spray.

In a medium to large mixing bowl, mix 3 eggs. Next, stir in 2 cups of M&Ms. You could use any kind of baking chips as well. Then, stir in a boxed cake mix. I used “yellow”. 

 

When it’s completely mixed, spread it in a circle on the pizza pan. Bake it for 25-30 minutes. Keep an eye on it. When it raises up and has a brownie-like consistency, it’s done, and needs to cool. Baking it too long will get you a doorstop, and unless that’s your goal, you’ll want to make sure it’s not in there too long.

 

When it’s cooled completely, you can decorate it or just cut it into bars or triangles. I used tub frosting in a rolled up tube of parchment to create an impromptu icing sleeve for cake decorating. The sky’s the limit!
