Granola Bites

These homemade granola bars are lovingly called bites because they are round. They are gluten-free, grain-free yet have an abundance of nuts and seeds, making them high in protein and fiber—a yummy snack.

Ingredients

  1. 1/2 cup pecans

  2. 1/4 cup almonds

  3. 1/4 cup ground flax seed

  4. 1/4 cup almond flour

  5. 2 Tablespoons hemp hearts

  6. 2 Tablespoons chia seeds

  7. 2 Tablespoons honey

  8. 1 Tablespoon stevia

  9. 2 Tablespoons coconut oil

  10. 2 Tablespoons Greek yoghurt

  11. 1/4 cup chocolate chips

 

Instructions

1. Preheat oven at 350 degrees

2. Using a food processor, combine all ingredients with the exception of the chocolate chips

3. Pulse in the food processor to ground up consistency, but be careful not to over-process, or it will turn into nut butter.

4. Place about 1/4 cup in a muffin tin and pat down to make a level surface

5. Bake for 10 min.

6. Take out of the oven, flip onto a flat sheet pan by placing sheet pan on top of the muffin tin and flipping

7. Remove muffin tin, allowing pucks to stay on the sheet pan; bake in the oven for 5 more minutes

8. Remove from oven and allow to cool at least 10 minutes before moving.

9. While the puck is cooling, melt the chocolate chips in the microwave in a glass dish according to package directions.

10. Once melted, stripe the granola puck with chocolate!

11. Let set for the chocolate to harden

 

Notes

  1. Switch out with your favorite nuts

  2. Try adding 1/4 cup pitted dates

  3. Leave off the honey for a keto version
