Thai Chicken Mushroom Soup

We had this soup at a local restaurant, and I loved it so much, I reinvented the recipe with my ingredients.  Thai food has a brilliant combination of flavors and smells that stimulate all the senses.  Sweetness (with coconut milk), sour (lime juice), salty (chicken or vegetable broth), and hot (garlic/ginger/pepper flakes) to satisfy and delight the tongue.  I have a lemongrass plant in my yard, making it easy to gather this ingredient for Thai dishes.  Otherwise, buy the lemongrass sprig at your local grocery store in the produce section by the fresh herbs.  This recipe made four hearty dishes of yummy soup.

Thai Chicken Mushroom Soup

Ingredients

2 stalks of Lemongrass thinly sliced and chopped

2 large Shallots finely chopped 

2 tablespoons of finely grated fresh Ginger

2 tablespoons of minced Garlic

1 -2 tablespoon Coconut Oil

2 cups Chicken broth or Vegetable broth

1 cup full fat Coconut Milk

2 cups cooked Chicken (I used shredded meat from a store bought rotisserie chicken) 

8-16 oz canned or sautéed Mushrooms

2 Tablespoons fresh (or bottled) Lime Juice

1/2 teaspoon of Sea Salt

Pinch of Black Pepper to taste

1/4 cup chopped Parsley

Garnish with Red Pepper flakes if desired.

Instructions

  1. Take the lemongrass and cut off any woody root tip and loose or dry outer layers.  Smash the inner stalk with the side of a large knife.  This will help it release the essential oils.  Cut diagonally across the stalk, then chop finely.

  2. In a large stock pot, saute lemongrass, shallots, ginger and garlic in coconut oil only until softened.  Do not overcook. 

  3. Add broth, coconut milk, and chopped chicken into stock pot; heat but do not boil.

  4. Add in mushrooms, and lime juice.  Add salt and pepper to taste.

  5. Remove from heat, add chopped parsley and serve in soup bowls.

  6. Add red pepper flakes to soup bowl for garnish, if desired.

NOTE:  Look for a brand of canned coconut that does not contain other ingredients.  Some brands have added gums and preservatives which can be harmful to the gastrointestinal lining. 

Try the organic coconut milk by Natural Value brand sold online, or Golden Star brand sold at Walmart.
