Cake Mix Cookies
While shopping at an Amish “Bent and Dent” store, I discovered a bulk box of chocolate cake mix. I grabbed it, thinking I’d make quick cupcakes for the daycare kids. However, I discovered the recipe on the box for cake mix cookies and found it to be even easier. It’s also better for managing serving size, and reducing the need for frosting. The cookies are moist and delicious.
As it goes with surplus stores, the big box disappeared, and I was left to figure out how to make this recipe with just one box of cake mix. Thankfully, there’s the Internet!
This recipe is flexible and can have any combination of flavors or add-ins. The basic recipe has three ingredients, and you probably have them in your pantry. We have been known to add frosting and sprinkles! I’ve never gotten 4 dozen out of it, because I use a cookie scoop for more generous-sized cookies.
I like to take the cookies out of the oven when they are just set, and then let them finish baking on the baking sheet. Silicone sheets to go on your baking sheet will give you a reuseable alternative to parchment.
Cake Mix Cookies (allrecipes.com)
Ingredients:
1 Box Cake Mix (18.25 oz)
2 eggs
1/2 Cup Vegetable Oil
*Add-ins as desired—flavored chips, nuts, dried fruit, up to 2-3 cups
Directions:
Preheat oven to 350 degrees.
In a bowl, combine cake mix, eggs, oil. I use my stand mixer for everything. You don’t have to.
Add in whatever you choose.
Make little balls with the dough, place on parchment lined baking sheet, bake 4-10 minutes. If you use white cake mix, you can make Snickerdoodles by rolling those little balls in a cinnamon/sugar mix before baking.
