Golden Cauliflower
I saw this quote recently “When cauliflower can become pizza crust, you my friend can become anything!”
This year cauliflower become the darling of the vegetable kingdom! I’ve seen cauliflower shredded and used for rice, used as an ingredient in hummus, buffalo wings, soup, and even ice cream! Did you know the compact firm head is called the curd? It is typically white but can be purple or orange. Cauliflower is one of several cruciferous veggies belonging to the Brassicaceae family of plants along with mustard, broccoli, and cabbage. These vegetables contain sulfur compounds that help your body with detoxification, support liver function, fight free radical damage, and decrease inflammation. Being a good source of fiber, vitamin C, folate, manganese, and vitamin K, not only is cauliflower a yummy veggie, but it is also a nutrient-dense, high anti-oxidant food.
If cauliflower has not been a vegetable of choice at your house, try this recipe for roasted cauliflower with seasoned nutritional yeast. It just may become your new favorite vegetable.
